    strawberry banana muffins

    There’s no better way to make use of over ripen bananas than to make banana muffins.  I have a really good go to recipe but I decided to search for another. I found a recipe by Giada De Laurentiis. She usually has really good recipes and it has a 5 star rating for this one.  Banana Muffins with Mascarpone Cream Frosting Recipe. The alterations I made was that first of all…I didn’t make the frosting… It’s not a cupcake =P no need for the frosting. The second was that i pureed about 1/2 cup of frozen strawberries and spooned some in between the layer of batter and put some on the top to make a fancy swirl hehe. They came out pretty good but I think that substituting 1/2 c. of the oil with 1/2 c. of butter would have made it better.. it’s sort of lacking some flavor that the butter could add. Other than that.. the strawberry definitely adds some great flavor to the muffin. Try it out!!!

    fresh from the farm

    There’s something so wonderful about dishes made with very minimal fresh ingredients.  Today I went to the farmer’s market and picked up fresh sweet basil and roma tomatoes.  I paired it with fresh mozzarella and eggs. Simply seasoned with black pepper and kosher salt. Result = sooo yummy!

    outrageous brownies

    This recipe has been haunting me for years.. I don’t really do brownies.. they usually come out way too sweet and too crumbly.. I usually would choose anything vanilla over chocolate.. However, when I saw this recipe for “outrageous brownies” by Ina Garten it just looked too good to not test out. It makes a ton a brownies!! It says that the level of difficulty is “intermediate” but I would say it’s easy.. unless your idea of easy is opening a box of betty crocker brownie mix. The most time consuming part of this is actually melting all the chocolate and butter. Yes it is a lot.. 1 pound of butter and ~ 2 pounds of chocolate. Yes 1 pound of butter! It makes a half sheet worth of brownies so, if you think of it proportionally, not too bad I guess? I’ll keep telling myself that. I think making 1/4 of this recipe would actually be perfect amount. I really recommend this recipe to bring to parties. There’s one thing I did substitute tho.. I used macadamia nuts instead of walnuts. Living in Hawaii, what else am I supposed to use.     Magnolia’s Vanilla Cupcakes

    When I think about cupcakes, I think of one of two places…Sprinkles in Hollywood or Magnolia Bakery in New York City. I knew I had to try this recipe because there are so few ingredients and I really love simple cakes that have natural flavors. It came out great c: I would definitely make these again!

    dark chocolate cupcakes with cream cheese frosting

    I have been thinking for a while about starting a blog of everything I create…something like the movie Julie & Julia.  Here’s to my very first post!!!

    I suddenly had an inkling to make some chocolate cupcakes. I was looking online and came across a recipe that seemed simple enough and sounded delicious.

    scharffen berger 70% dark chocolate 

    chop it up!!

    melt unsalted butter + chopped chocolate + dutch process cocoa

    melt until smooth & glossy

    add in sour cream and eggs .. then sift in dry ingredients

    bake about 18 mins

    frost it up and enjoy.
